Happy New Year everyone!! We hope you all had a great holiday season and a wonderful New Year's night! 

We have been a little quiet on here recently due the holiday hours and the family gatherings, but its a new year and time to get back to it!! Aren't you excited? We sure are!

This past Friday was our first sales meeting of 2015 and we think it went pretty great! We had a few new lines like Italian Rose and Brakebush Chicken along with some old favorites of ours McCain and Juice Tyme! We also went to school to learn about Bunn maintenance by our guest speaker Chris Wurtzel! 

 

We had so much fun finding recipes for this months cookbook! We had so many good ideas it was hard to narrow it down! We finally decided on Caribbean Chicken recipes using the Italian Rose Caribbean Rub/Marinade!

Ingredients:

Italian Rose Carribean Marinade - item number 220016, pack size 6/32 oz
Brakebush 4 Oz Chicken Breast - item number 592453, pack size 2/5 LB bag
Mango Salsa (not sold by Palmer Foodservice)
Mission Tortillas - item number 490730, pack size 6/12 CT
 
Marinate chicken breasts in Caribbean Marinade, then grill on flat top or grill. Dice chicken and place on tortilla, top with mango salsa and garnish with parsley.
 
*use this white sauce recipe for a little extra kick!

1 Cup Mayonnaise
½ Cup Sour Cream
¼ Cup Cilantro
1 Cup Mango Salsa
Juice of 1 Lime
Dash of Cayenne
Salt and pepper to taste 
 
Caribbean Chicken Kabobs
 
Ingredients
Brakebush 4 oz Chicken Breasts - item number 592453, pack size 2/5 LB bag
Italian Rose Caribbean Marinade - item number 220016, pack size 6/32 Oz
Fresh Red Pepper - item number 107129, pack size 1/5 LB
Fresh Pineapple - item number 102531, pack size 7 CT
Red Onion - item number 107136, pack size 10 LB
 
Marinate Chicken in Caribbean marinade. Cut pineapple, red pepper, red onion and chicken into 1 inch chunks. Spear onto wooden skewer that has been soaked in water. Place kabobs on the grill or flat top and cook through. 
 
Zesty Dipping Sauce
 
 
Ingredients
 
Italian Rose Horse Raddish - item number 210143, pack size 6/32
French's Ketchup - item number 608833, pack size 12/20 Oz
Worcestershire Sauce - item number 262196, pack size 24/5 Oz
Gold Medal Mayo - item number 306586, pack size 4/1 Gal
 
In a bowl combine 1 cup of mayo, 1/2 cup of ketchup, 1 tbsp of horse raddish, and 1 tsp of worcestershire sauce. Mix well and serve with onion rings or jalapeno poppers!
