It might be raining today, but spring is here and sunshine and warm weather are on their way! To make today a little brighter we want to share all things Easter with you, because nothing is brighter than family events and those cute little neon colored marshmallows!

On this blog we try very hard to stick to recipes that are quick and easy as well as delicious! But today we just had to show you these cute little Easter cupcakes using Peeps!

15.25 Oz White Cake Mix - 365005

1 ¼  Cup Water

1/3 Cup Vegetable Oil

3 Eggs

1 cup assorted mini candy-coated chocolate candies, jimmies or confetti candy sprinkles

1 LB Butter Cream Icing - 555137

Green food coloring

24 yellow PEEPS® brand marshmallow chicks

Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.

Mix cake mix, water, oil and eggs together in a large mixing bowl until all ingredients are blended and batter is smooth. Divide batter evenly among muffin cups (about two-thirds full).Bake for 18-23 minutes. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes.

Using melon baller, scoop out center of each cupcake, about 1 inch deep. Fill each with 1 heaping teaspoonful candies.

Spoon frosting into medium bowl; stir in enough food color until desired green color. Frost cupcakes. Top with yellow PEEPS® chick. Store loosely covered.
