A Touch of Cajun Cookin'

There is a light at the end of the tunnel that is winter! We are in the first week of March and it is already more promising that last year (remember that ice storm?!?) We are a week away from Day Light Savings time and just two weeks from the official first day of Spring! Baseball teams are being formed and basketball in full swing, we can practically feel the warm weather setting in to stay!

That being said, one of the best (and easiest) warm weather meal is a Low Country Boil. Throw all of your ingredients in one pot and let it go! Louisiana Fish Fry has the perfect amount of heat and flavor!!

PALMERS LOW COUNTRY BOIL:

 

Cook and Prep Time – 1 hour

Servings – 10

¼ to ½ cup Louisiana Fish Fry Boil Seasoning – 600009

4 lbs. Medium Red Potatoes

2 to 3 Medium Sweet Onions

2 lbs. Smoked Rope Sausage - 511080

8 Ears of Corn

4 lbs. of Raw 16/20 ct. Shrimp – 564030

 

Directions

Fill a 7-gallon stockpot halfway with water.  Add the seasoning and bring to a rolling boil.   Add the whole potatoes to the pot.  Allow the water to return to a boil and cook 5 minutes.   Add the onions and sausage.   Bring the water back to a boil and cook 15 minutes.   Add the corn, bring the water back to a boil and cook 10 minutes, or until the potatoes are done.

Add the shrimp, bring the water back to a boil and cook until the shrimp turn pink, about 3 minutes. Drain through a colander; discard the liquid.  Add additional Louisiana Fish Fry Boil as desired for taste and spiciness.  Serve on newspaper or a platter. 

 

If that doesn't get your Cajun heart pumping, then maybe Shrimp Creole is more your style. With its spicy southern blend of flavors that will make you feel as if you were in the backwoods of Louisiana!

Tennessee Dirty Rice:

 

Prep and Cook Time – 35 Minutes

Servings – 20 / 8 oz. Servings

 

Ingredients:

2 ½ lbs. Ground Beef, Pulled Pork, Brisket, Ground / Rope Sausage or Pulled Chicken

One bag (2.5 lbs.) Louisiana Fish Fry DIRTY RICE MIX - 600279

3 qts. Water

 

Directions:

Cook off your choice of protein. Feel free to mix proteins as well.

Add water and Louisiana Fish Fry Dirty Rice Mix

Bring to boil.  Reduce heat and simmer for 20-25 minutes.

Serve.

 

And last but not least for those chilly days that require something to warm you from the inside out is, of course, Louisiana Fish Fry Gumbo!

LOUISIANA FISH FRY GUMBO:

 

Prep and Cook Time: 35 Minutes

Servings: 27 / 8 oz. Servings

 

Ingredients:

Louisiana Fish Fry GUMBO MIX - 600035

1 ½ lbs. Raw P & D Shrimp 30/40 ct. – 565106

2 lb. Pulled Chicken

1 lb. Smoked Rope Sausage, Chopped - 511080

½ Gallon COLD Water

White Rice

(Optional – Okra, Celery, Onions)

 

Directions:

In a skillet, slightly brown off the Smoked Rope Sausage.

In a large pot, boil chicken until done then drain immediately. Pull.

In a large Stock Pot, Mix ½ gal. cold water and Louisiana Fish Fry Gumbo Mix, bring to a boil.

Add Shrimp and continue boil for 3 minutes.

Add Chicken & Sausage, reduce heat and simmer for 10 minutes.

Serve over White Rice.
